Ingredients

  • 1 tbsp oil
  • 2 tbsp butter, divided
  • 1 large white or yellow onion, finely chopped
  • 1 tbsp garlic, crushed
  • 1 tbsp ginger, grated
  • 1 red or green bell pepper, chopped
  • 3 roma tomatoes, chopped
  • 2 large potatoes, peeled and chopped
  • 1 cup cauliflower, chopped
  • 1 medium carrot, chopped
  • ¾ cup green peas
  • 1 cup of water
  • 2 tbsp Pav Bhaji Masala by The Spice Collective
  • 2 tsp salt
  • 2 tbsp tomato paste

Instructions

  1. Add potatoes, cauliflower, carrots, and peas to a pressure cooker. Pour 1 cup of water so vegetables are partially covered
  2. Pressure cook until you hear two whistles. Allow pressure to release naturally, open lid when released. Mash the vegetables with a potato masher until smooth
  3. In a large pot, heat oil and 1 tbsp butter on medium heat. Add chopped onion, garlic, ginger. Saute until the onion is translucent.
  4. Add bell peppers, tomatoes, tomato paste, and salt, continue sauteing for five minutes until tomatoes are soft
  5. Add Pav Bhaji spice blend, mix well and continue cooking for 2-3 minutes
  6. Add mashed vegetables, mix well and simmer for another 10 minutes to allow the flavors to meld, add additional salt or spice blend to taste.
  7. Turn off heat, add chopped cilantro
  8. Heat a pan or griddle over high heat, spread butter on both sides of the buns (pav), decrease heat to medium, toast buns on both sides until brown
  9. Serve bhaji on a plate, with toasted buns. Top bhaji with a squeeze of lime and chopped red onion.
