The perfect blend of rich spices to create a marinade or tomato-based gravy dish with your favorite protein, paneer, or vegetables.

Ingredients

  • PROTEIN:
  • 2 lbs of chicken breast cut into 1 inch pieces
  • OR 14 oz of paneer cut into 1 inch cubes and 1 large green bell pepper cut into 1 inch pieces
  • MARINADE:
  • ½ cup yogurt
  • 1 tbsp Tikka Masala blend by The Spice Collective
  • 2 tsp oil
  • 1 tbsp lemon
  • ½ tbsp salt
  • GRAVY:
  • 1 tbsp oil
  • 1 yellow onion, chopped
  • 1 tbsp garlic, grated
  • 1 tbsp ginger, grated
  • 1 15oz can of crushed tomatoes
  • 1 ½ tbsp Tikka Masala blend
  • ½ cup heavy cream (optional)
  • Salt to taste
  • ¼ cup chopped cilantro

Instructions

  1. In a medium mixing bowl, combine marinade ingredients, mix well. Add cubed chicken or paneer, stir into marinade to ensure all pieces are coated. Cover and refrigerate for at least 4 hours, overnight is recommended.
  2. Heat 1 tsp of oil in a large frying pan over medium-high heat or use a grill pan sprayed with oil. Add chicken or paneer pieces. For chicken: cook until browned and cooked through. For paneer: gently grill until paneer begins to lightly turn brown. Remove from pan, set aside.
  3. In a large pot, heat 1 tbsp oil on medium heat, add onions, garlic and ginger, saute for 5 minutes until onion is tender but not browned.
  4. Add 1 ½ tbsp Tikka Masala spice blend and stir constantly for about a minute until spices are fragrant.
  5. Stir in crushed tomatoes. Optional: for a saucier gravy, use an immersion blender at this point to puree. For a creamier gravy, add ½ cup of heavy cream.
  6. Bring gravy to a boil, lower heat to medium, cover and cook for about 10 minutes or until gravy thickens.
  7. Add in chicken or paneer/bell pepper pieces, stir well. Let simmer for 10 minutes. Remove from heat and top with cilantro.

To make this a vegan dish, extra firm tofu can be used in place of paneer, follow the recipe to marinate just as you would with the paneer.
